Macadamia Avocado Goat Cheese Salad
A simple salad that can be prepared in minutes.
1/2 cup Macadamia nuts
4 cups mixed greens
1 avocado, pitted, peeled and cubed
3 scallions, chopped
Fresh cilantro to taste, chopped
4 Tablespoons Lime infused olive oil (to substitute, use regular olive oil and fresh lime)
4 oz. CRYSTAL BROOK FARM GOAT CHEESE*
Salt and pepper
Toast the macadamia nuts at 350 for no longer than 3 minutes (and watch them, they burn fast). Rinse and dry the greens and put in salad bowl. Soak cilantro in chilled water then rinse, chop and add to greens. Add chopped scallions. Add cubed avocado. Drizzle lime-infused olive oil on top of salad. Sprinkle toasted macadamia nuts on top. Dollop Crystal Brook Farm Goat Cheese on top. Salt and pepper to taste and serve. Serves 4.
